Cahillton Yarra Valley Viognier 2007
2007 was a challenging vintage throughout Victoria. Late winter was cool and dry with significantly lower rainfall levels in the lead up to harvest. As a result, vine vigour was reduced which led to more concentrated flavour development in the lead up to ripening. Severe frosts followed by a period of intense heat in early February saw an overall crop reduction and the fruit was harvested 2-3 weeks earlier than usual to avoid overripe characters developing ensuring the ideal sugar/acid levels were achieved
